One diced spanish onion can be added to taste.
Also to introduce other vegetables to your child, substitute one squash with equal parts carrots and or sweet potatoes.
Vegetable stock can be used in lieu of the chicken stock for a vegetarian version.
To expand the recipe with three squash, simply add another quart of stock and stick of butter.
