This dish has a very Swiss feel to me. A simple, rustic, kinda throw whatever you have in your fridge in the pan type of dish.
You can make your own hash brown or use some store bought. I personally love to have a couple of bags of frozen hashbrown from trader Joe?s in the freezer.

Good for lunch boxes?No, better right out of the pan.

What you need

How it's made
  1. Render the bacon in a saut? pan on a medium high heat. Discard the grease and reserve the bacon on a paper towel.
  2. Bring the pan back to the heat and warm the oil and butter up. Add the onion to sweat and add the bacon back to the pan.
  3. Mix in the frozen spinach and chopped tomatoes. Cook for a couple minutes.
  4. Add the hash browns (frozen is fine). Cook stirring frequently for about 4-5 minutes.
  5. Lightly beat the eggs in a small bowl with some salt and pepper. Pour the eggs over the hash brown and add the cheese as well. Keep stirring until the egg is cooked and cheese melted. Rectify the seasoning and serve!
