My boy (3 1/2 year old): Maman? What are you making for lunch?
Me (always a little worried to answer that kind of question): Yummy lentils!
My boy: Lentils? Yeaaaah lentils! Daddy!! Mommy is making lentils for my lunch!
Ahhhh music to my ears.
This is an amazingly easy and healthy dish to make. And it all happened one morning when I had nothing made or planned to send my kids to school with. I use to buy those steamed lentils from Trader Joe?s and mix them with their jarred bruschetta sauce (Amazing tip from Alicia P. super mommy). So I happened to have those lentils in my fridge.
Ok, what else? Hmmm, frozen veggies, oh yes I have those little sausages, and some chopped tomatoes to blend the whole thing. The result was amazing! When I picked the kids up from daycare that day, the teacher told me ?boy they really liked that lunch today, they got the whole thing down in no time?. (YESSSSSSS)

- 1 packsteamed lentils or dry lentils*
- 1/2onion chopped
- 6 ozchicken sausages**
- 1/2 cupfrozen diced carrots
- 1/2 cupfrozen peas
- 1 cupchopped tomatoes (can)
How it's made |
- Chop the onion and slice the sausages. In a little dutch oven, warm up the oil over a medium-high heat, and sweat the onion. Add the sausage and saut? for a couple minutes, up until it starts browning and smelling amazing.
- Add the carrots, peas and lentils to the pot. Cook for another 2 minutes. Mix in the chopped tomato, and salt.
- Mix once more, cover and cook on low heat for 10 minutes. All done

**You can use any sausage you want, but I have to mention ?Chef Bruce Aidells? Hawaiian Style smoked chicken sausage with pineapple?. They are incredible, what a find. They don?t taste like pineapple, but have that super yummy smokiness that flavors the whole dish.
