Chili is one of those great dishes that are easy to make and that you can let simmer for a while.?You can also use?a slow cooker. To do so just follow the recipe up until?adding the tomato and?put everything in the slow cooker. Cook on low for 8 hours, or for 4 hours on high. I like to serve it with biscuits or rice. My husband likes it with chopped raw onions and grated cheese on top. Enjoy!

What you need

How it's made
  1. Warm the oil in a medium hot pan. Add the onion and saute until starting to have a nice color. Add the chicken and brown the meat, mixing it well to separate.
  2. Add the oregano, cumin, chili powder, wine and stir. Let the wine reduce to about half and then add the broth, chopped tomato and sauce, beans, garlic and the adobo sauce*. Turn down the heat to low, cover and let simmer for about 20mn.
  3. Add the frozen veggies, cilantro, rectify the seasoning and let cook for another 20 mn.

*Note about the chipotle peppers in adobo sauce: this?will bring the heat to the chili. If you or your child doesn?t like it spicy, just add a bit of the adobe?sauce?only (~2 tsp), it will bring a nice smokey touch. If you like it spicy, then use the chopped the pepper as well.
